I thought my Minimalist Baker, Oh She Glows, and Vegan for Everybody cookbooks were the best. Nope, THIS cookbook is the best. I was a little leary when I walked out of the grocery store today after spending just 86.00 (normally I spend up to twice that on groceries). Most of her recipes are not just plant based but vegetables make up the bulk of the dish and there aren’t a ton of obscure ingredients… so grocery shopping was a cinch and much cheaper than typical. I made the vegetable stew with dumplings and the balsamic mushroom salad. The recipes were unique – never have I ever made a stew with celery root in it, or SPELT dumplings with dill – but this dish made my tastebuds dance! It was fabulous. The spinach salad was topped with this pine nut “Parmesan” with nutritional yeast and fresh lemon zest and it made for a really fresh tasting, unique dish. My meat eating husband gobbled up both dishes, and I felt good serving him something so healthy. This recipe book is a keeper!
